Vegan Street Corn Pizza
There’s nothing better than a good pizza and beer on the weekend. If you are tired of the same style of pizza like tomatoes, mozzarella, and sausage, then try something different. Try my street corn pizza with roasted corn, soyrizo, and chipotle mayo.

Ingredients
- Pizza Dough or Pre-made Pizza Crust
- 3 tbsp olive oil (divided 2 tbsp / 1 tbsp)
- ¼ tsp salt
- ¼ tsp garlic powder
- ¼ tsp black pepper
- 2 cups of frozen corn
- 2 jalapenos
- 1 large yellow onion
- 1 cup of vegan mozzarella
- 1 cup of vegan cheddar
- Vegan soyrizo
- ½ cup of vegan mayo
- 2 chipotle peppers
- Green onions
- 1 lime

Preheat the oven to 425 degrees Fahrenheit.

Cut all the onions and jalapenos into large chunks, add them with the corn and 2 tbsp of olive oil to a sheet pan or 9×9 baking pan, and throw them into the oven bottom shelf for about 20 minutes.

Prepare your pizza dough or premade crust, brush on 1 tbsp of olive oil and add the salt, pepper, and garlic powder. Bake your pizza dough on the top shelf of the oven for about 7 minutes.

Create a chipotle mayo by adding the vegan mayo, chipotle peppers, and about 1 tbsp of water to a blender, and blend until smooth.

Add the soyrizo to a pan and cook until brown. Add a splash of olive oil if needed.

Take the pizza dough out of the oven, flip over and add the chipotle mayo.

Next add the cooked soyrizo.

Once the corn, onions, and jalapenos are done roasting, add them to the pizza.

Top with the vegan cheeses and throw in the oven for 7-8 minutes.

Once the cheese has melted, take out of the oven, top with green onions and a squeeze of lime.
