Vegan Seared Shrimp Tacos
Ok, I know what you’re thinking! “Vegan shrimp tacos!? How’s that possible?” Simply put, a very simple vegan replacement for shrimp are hearts of palm. You have to treat the heart of palm and cook it differently than shrimp, but the flavor can be very similar. A major advantage here is that the cost of hearts of palm are remarkably less than shrimp, so here is another example of how vegan food is less expensive than eating meat.

Ingredients
- 14-16oz of Hearts of Palm
- 3 tbsp vegan butter
- ¼ tsp salt
- 3 cloves of garlic
- 16 oz of coleslaw mix
- ⅓ cup vegan Mayo
- 2 tbsp apple cider vinegar
- 2 tbsp agave
- 1 tsp salt
- 1 tsp black pepper
- ¼ tsp of crushed red pepper
- Zest of 1 lime
- Juice of 1 lime
- Corn or Flour tortillas
- Avocado
- Tajin to taste

Cut the hearts of palm into round pieces about ½ to ¾ inch thick.

Add butter to a pan on medium heat, once melted, add the heart of palm pieces. Once the pan is full of hearts of palm add diced garlic.

Sautee the hearts of palm until they are seared on one side, then flip to sear the other side. Add salt to taste.

While the hearts of palm are cooking, add the coleslaw mix to a mixing bowl. Add the vegan mayo and stir thoroughly.

Next add the apple cider vinegar, agave, salt, black pepper, red pepper, lime zest, and lime juice, then stir thoroughly.

Once the hearts of palm are seared on both sides, remove from pan.

Build the taco on the tortilla in this order: coleslaw, hearts of palm, avocado, and lastly season with tajin.
