Vegan Peach Carolina Reaper Jam
This is the perfect jam for whiskey or scotch tastings. Even for your meat-eating and dairy-eating friends, it pairs well with pretty much anything. But those of us that don’t eat meat or dairy, this jam has all the flavor for savory and sweet foods. I don’t only eat this jam on toast with nut butter, or a bagel with vegan butter, but try it on your black bean burger or a vegan grilled cheese!

Ingredients
- 6-8 Ripe Peaches
- 1/2-1 cup of sugar
- 1/4-1/2 cups of water
- 1/2 of a Carolina Reaper pepper
- 2 tbsp of Corn Starch in 1/4 cup of warm water

Cut up your peaches.

Throw the peaches in a pot over medium heat with between 1/4-1/2 cup of water.

After the peaches have softened, use a potato masher to mash the peaches.

Next add the sugar and let the peaches cook down for about 10 minutes.

While you wait for the peaches to cook down, mix the cornstarch with warm water. After the peaches have cooked down, add the cornstarch water mixture.

Carefully chop the Carolina reaper pepper into small pieces, remove the seeds if you’d like the heat lower, and use precautions such as gloves. Then add to the jam.

Let this cook down for another 8-10 minutes until thickens up. Be careful not to put your head over the mixture or let the steam reach your eyes.

Next pour the jam into a jar. Let the jar cool and then place in the refrigerator. You can eat within 3-4 hours. Unless you sterilize the jar, don’t keep for more than 3 weeks.
