Vegan Korean BBQ Bowls
We’re just getting down to basics on this recipe. This is a very simple dinner recipe and really easy to make! You are going to love the combination of the mango and Korean BBQ flavors. I hope you enjoy this vegan dinner!

Ingredients
- Tofu:
- 1 block of firm Tofu
- 4 tbsp olive oil
- 2 tbsp of soy sauce
- 2 tbsp cornstarch
- 2 tbsp flour
- ¼ tsp salt
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Korean BBQ Sauce:
- 1/4 cup of sugar
- ½ cup soy sauce or aminos
- 2 tbsp Gochujang chili paste
- 1 tbsp sriracha
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- 2 cloves of garlic diced
- 1 inch of ginger diced
- 1 cup of warm water mixed with 2 tbsp corn starch
- Coleslaw:
- 8 oz of broccoli slaw
- 1 mango diced
- 2 tbsp rice wine vinegar
- 1 tbsp apple cider vinegar
- 2 tbsp agave
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- Remaining Bowl Ingredients:
- Rice
- Green onions diced

Press the tofu for 20-30 minutes to get the moisture out.

While the tofu is pressing make the rice.

Add the olive oil, soy sauce, and 1 tbsp of sriracha to a mixing bowl. Next tear the tofu into chunks and throw them into the mixing bowl. With your hand stir it around until the oil has thoroughly coated the tofu.

Add the cornstarch, flour, salt, garlic powder, and black pepper to the tofu mixture. Then stir it again with your hand to coat evenly.

Cook the tofu in an air fryer on 370 degrees for 10 minutes. After 10 minutes, shake the basket, and cook on 370 for another 8 minutes. (If you don’t have an air fryer, you can bake at 400 degrees for 15 minutes, then turn them over, and bake for another 15 minutes).

Mix the corn starch with warm water and set to the side. Add all the remaining sauce ingredients to a pot and bring to a boil.

Once the sauce is boiling gradually add the water and corn starch mixture. Keep whisking, once all of the water and cornstarch is in the pot, turn it down to medium heat. Keep whisking until the sauce thickens up.

Once the sauce is made, throw the fried tofu in and thoroughly coat.

Add all the coleslaw ingredients to a bowl and mix thoroughly.

Create bowls in the following order: 1) rice, 2) BBQ tofu, 3) coleslaw, 4) green onions.
