Grilled Peach and Tempeh Salad

This is a great salad for summer, it’s easy to make, and it’s affordable! Another great benefit to this salad is that it is full of protein. Remember that tempeh has a high amount of protein as much as beef, but far less fat and almost no cholesterol. So this is a great meal for someone that has just finished a workout and needs protein, and doesn’t want to erase their gains with fat and cholesterol.

Ingredients

  • Tempeh
    • 1 Block of Tempeh
    • 1 tbsp olive oil
    • ½ tsp salt
    • ½ tsp black pepper
    • ½ tsp paprika
    • 1 tbsp soy sauce
    • 2 tbsp maple syrup
  • Salad
    • 4 peaches
    • ½ cup of walnuts
    • Bunch of spinach
    • Bunch of arugula
  • Dressing
    • Juice of 1 lime
    • Juice of 1 orange
    • ½ cup of olive oil
    • ¼ cup of apple cider vinegar
    • ½ tsp salt
    • ½ tsp black pepper
    • ¼ tsp crush red pepper
    • ½ tsp garlic powder
    • 1 tbsp maple syrup

Cut the tempeh into slices, and then into small squares.

Add the tempeh to a frying pan on medium heat and let them cook in a dry pan. Once slightly brown on one side, flip and let them brown on the other side. Add some olive oil to let them crisp up.

In a measuring cup mix the tempeh ingredients together. Then add to the frying pan. Let the tempeh cook in the wet ingredients for 1-2 minutes, then remove from the heat.

Use a grill plate on medium high heat. Cut the peaches into slices and add to the grill plate. Grill and sear the peaches for about 3-4 minutes on each side to allow for searing grill marks.

Mix the ingredients together for the dressing.

Combine the salad ingredients in bowls. Add the seared peaches. Then add the cooked tempeh on top. Top the salad with the dressingAdd butter to a pan on medium heat, once melted, add the heart of palm pieces. Once the pan is full of hearts of palm add diced garlic.
