Ghost Pepper Tinga Tacos
This was an interesting recipe, that I discovered a few years ago, but the traditional tinga is made with chicken. I tried to take this traditional Mexican dish and turn it into a vegan tinga. This recipe also adds an extra kick with some ghost pepper. So for all you that love spicy foods, I hope you enjoy this vegan version!

Ingredients
- 2 cans of jackfruit
- 1 tsp of ghost pepper flakes
- Tinga Sauce:
- 2 tbsp olive oil
- 1 onion
- 2 cans of diced tomatoes
- 3-4 chipotle peppers
- 2 tsp salt
- ½ tsp black pepper
- 1 tsp oregano
- 1 tsp paprika
- 2 tsp cumin
- Tacos:
- Tortillas
- Avocado
- Red Onion diced
- Cilantro chopped

Add olive oil to a pan over medium heat, then add the diced onion. Saute until onions are soft.

Add all of the Tinga Sauce ingredients to a blender. Once the onions soften, add the onions to the blender. Blend thoroughly.

Add the Tinga Sauce back to the pan over medium heat and simmer for 5 minutes.

Shred the jackfruit, then add to the Tinga Sauce. Next add 1 tsp of ghost pepper flake. Cook for about 20 minutes.

Once the jackfruit Tinga is cooked, build the taco in the tortilla in this order: 1) Tortilla, 2) Tinga, 3) Avocado, 4) Diced red onion, 5) Chopped cilantro, 6) Squeeze of lime.
