Roasted Pepper Salsa
This has to be my absolute favorite things to make, and it is naturally vegan. Seriously, you can go into any restaurant or grocery store and buy salsa and it is vegan. You don’t need it say vegan on the label, it’s already vegan.

Ingredients
- 2 cans of fire roasted tomatoes
- 1 red bell pepper
- Drizzle of olive oil
- 1 large red or yellow onion
- 4 cloves of garlic
- 2 jalapenos
- 2 tbsp of chili powder
- 2 tbsp of paprika
- 1 tbsp of cumin
- 2 chipotle peppers with adobo sauce
- 1 tbsp of salt
- 1 tbsp of black pepper
- 1 lime
- 1 bunch of cilantro

Pre-heat the oven to 400 F.

Cut up the bell pepper, onion, and jalapenos, then throw them in the oven for about 20 minutes. Check on them, and if they are not roasted enough let them roast for another 5-10 minutes. Your goal is to get a nice char on the veggies.

While the vegetables are roasting, add to a blender garlic, the whole bunch of cilantro, chipotle peppers, lime juice, and all the spices. Blend these up as best you can.

When the vegetables are done roasting, add them to the blender, and blend.

Last add the fire roasted tomatoes, and blend together thoroughly, but leave it slightly chunky.

Test the salsa, and adjust if it needs more salt.
