Balsamic Mushrooms with Kale Mashed Potatoes
This meals is easy to make for a quick dinner, it’s affordable and makes plenty of left-overs. You can make the balsamic mushrooms as is, or you can add more vegan protein with vegan faux meats, like a vegan sausage.

Ingredients
- Balsamic Mushrooms
- 10oz-12oz of white button or Baby Bella mushrooms
- 1 large onion
- 3 cloves of garlic
- 1 tbsp olive oil
- 2 tbsp of soy sauce
- 4 tbsp of balsamic vinegar
- ¼ tsp salt
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1 tbsp of agave
- Kale Mashed Potatoes
- 4-5 lbs of yellow potatoes
- 2 tbsp of vegan butter
- 1 cup of plain unsweetened almond milk
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 10oz of kale

Fill up a large pot about 1/3 full with water, bring it to a boil, then throw in all of the potatoes. Turn down to medium high and let the potatoes boil for about 15-20 minutes until the potatoes become soft.

Add some olive oil to a pan on medium heat and add all of the kale. Sauté the kale until it wilts, add some salt and pepper to taste.

Once the kale is sautéed, set aside on a plate.

Add some more olive oil to the same pan on medium heat, then add the diced onions and mushrooms to the pan and sauté until they begin to get soft (about 8-10 minutes).

Once the onions and mushrooms become soft, add the soy sauce, balsamic vinegar, agave, salt, pepper, and thyme. Sauté further for another 4-5 minutes.

Drain the water from the potatoes, put the potatoes back in the pot, and begin to mash. Add the vegan butter, and continue to mash. Add the almond milk and continue to mash until smooth.

Add the sautéed kale, oregano, basil, garlic powder, onion powder and mix in with the mashed potatoes.

Spoon the mashed potato mixture onto the plate, and create a bowl with the mashed potatoes. Add the balsamic mushroom mixture into the mashed potato bowl.
