Vegan Garlic Mashed Potatoes
Some people say, “I don’t know what I’d eat if I did a vegan diet!” And I usually ask, “well what do you eat now?” Usually most meat and potatoes meals are served with mashed potatoes, and this is inherently vegan, with just a few simple vegan replacements! Don’t be afraid of trying a vegan diet, because you can still have garlic mashed potatoes. These are something I loved to eat growing up, and I still get to eat them now!

Ingredients
- 2.5 pounds of potatoes
- 4 tbsp vegan butter
- 6 cloves of garlic
- 2 tbsp olive oil
- 1 cup unsweetened plain almond milk
- 4 oz vegan cream cheese (optional)

Pre-heat the oven to 425.

Cut the potatoes into chunks and add to a large pot of boiling water. Cook until potatoes are soft.

Place all garlic on a piece of aluminum foil. Drizzle with olive oil. Wrap up the aluminum foil into a ball so that the olive oil doesn’t leak. Throw this in the oven for about 15-20 minutes.

Once the potatoes have cooked, drain the water and pot the potatoes back into the pot.

Add the vegan butter and plant based milk, and begin mashing. If the potatoes need a smoother consistency, add some more milk.

Once the garlic has roasted, take out of the oven, unwrap aluminum foil, and pour into the mashed potatoes. Mash these into the potato mixture.

Optional, add vegan cream cheese if you have some, and mash it in.
