Vegan Black Bean Tostadas
This has to be one of the easiest vegan meals to make! It’s so simple, but it’s filling and packed with flavor. You can customize yours even further beyond what I have included here.

Ingredients
- 1 pack of tortillas
- Vegetable or coconut oil for frying
- 1 can of vegan refried beans
- 1 can of black beans
- 1 large red or yellow onion
- 1 lime
- 1 bunch of cilantro
- 2 jalapenos
- 1 bunch of lettuce
- 1 large tomato
- 1 pack of soyrizo or beefy crumbly (optional)
- Salsa (optional)
- Vegan Cheese (optional)
- Nut Yogurt (optional)
- Hot Sauce (optional)
Steps

Add your oil to a frying pan over medium heat.

Once the oil is heated add the tortilla to the frying oil. You will need to flip the tortilla 2 or 3 times to fry the tortilla evenly. Remove from oil when it has gotten crispy.

In another frying pan, add your soyrizo or beefy crumble and season with salt, pepper, chili powder, and paprika.

When the vegan meat is cooked, remove from the pan and add the refried beans and black beans.

Once all the cooked elements are complete, put the elements together. Start with the crispy tostada on the bottom, next add the beans, then add the vegan meat, then add the lettuce, tomato, onions, cilantro and jalapeno. Top with salsa, nut yogurt, vegan cheese, and hot sauce.
